1st Dinner!

We started a new dinner group. Jacki made Hawaiian Hamburgers, Clarissa made Fiesta Bean Salad, and Rachel made Peanut Butter Cup Cupcakes. The food was great and the company even better! We had a great lesson about needing opposition in all things and ways to overcome it and then had fun playing outside.



Fiesta Bean Salad (from skinnytaste.com)
2 cloves garlic, minced
3 tbsp fresh lime juice
1 tbsp extra virgin olive oil
1 tsp cumin
pinch crushed red pepper flakes
1/2 tsp salt
15 oz can of black beans, rinsed and drained
1 cup canned chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup minced red onion, finely diced
1/4 cup cilantro, chopped
1 medium avocado, diced
In a large bowl, combine the garlic, lime juice, oil, cumin, crushed red pepper, and salt. Add the black beans, chickpeas, tomato, onion and cilantro; mix well. When ready to eat, gently mix in avocado and serve right away.
Makes 4 1/3 cups.

Hawaiian Hamburgers
Slice a pineapple and grill slices
Grill burgers, adding cheese if desired
Heat sandwich ham slices in skillet
Mix 1 cup mayo and 1 tbsp sriracha sauce
Toast hamburger buns
Assemble and enjoy!
